Texas BBQ Trail-Mouth Waterin’ Goodness

texas_05.gifIf you grew up north of the Mason-Dixon line, you may think BBQ is chicken charred on a grill and coated with sticky, sweet sauce. You couldn’t be more wrong. True BBQ may add sauce as a final touch, but it’s all about the spices, the smoke, and the long, slow process, which yields meat deeply flavored from bone to skin and so tender it falls apart at the slightest touch.

Ask a BBQ aficionado where to find the best of this luscious meat, and every person you talk to will send you in a different direction, to his or her favorite. But if you want to sample several delectable carnivorous treats, or even spend a few days tearing flesh from bone and licking your fingers, then head for the heart of BBQ country, also known as the heart of Texas, and hit the Texas BBQ Trail.

A short drive outside of Austin, TX lie four towns that have been serving up BBQ for generations. There is practically no end to the meats the many BBQ spots in these towns will serve you – beef brisket and ribs, pork ribs, pork chops and tenderloin, chicken, ham, turkey – and several make their own sausages, too. For you and the meat-lover in your life, this will quite possibly be best road trip ever.

Here is just a sample of what you’ll find out there:

Chisholm Trail Lockhart Bar-B-Q & Hot Sausage
is located at 1323 S. Colorado and started operations in 1978. Chisholm Trail serves barbecue brisket, fajitas, beef and pork ribs, pork chops, chicken, ham, turkey and their own recipe sausage. In a town where sides can be few and far between, Chisholm Trail BBQ has a large cafeteria style hot food bar including pinto beans, green beans, fried okra and squash and salad bar with traditional cole slaw, potato salad plus numerous special salads. Fried Catfish (M-W-F) and hand breaded Chicken Fried Steak (T-TH) are the weekly specials. Desserts include homemade Peach Cobbler with soft ice cream. All barbecue is sold by the pound, wrapped in butcher paper, by the plate with 3 sides or as a family meal. Open 7 days a week. 8 am - 8 pm. The local’s favorite.

Taylor Cafe
Located in the oldest building in downtown Taylor, has been serving slow cooked meats in a honky-tonk atmosphere for more than 50 years. A half century of practice has perfected the meats Vencil Mares serves customers today. A staple of most Taylor family gatherings and internationally famous, Taylor Cafe serves up brisket, sausage, turkey sausage, chicken, ribs, potato salad, beans and tea flavored with lemon. To experience the restaurant and then taste the food, there’s none better. Taylor Cafe is located at 101 N. Main in the red tin building. Hours are 7a.m. to 10 p.m., 7 days a week.

I’m hoppin’ on the next plane. That looks absolutely delish and I wish we had more restaurants like that where we live. Unfortunately, we are not much of a bbq town.

Awake-Thanks for the award ya’ll have some okay bbq up there in the North East but unfortunately for some reason ya’ll boil the meat before it hit the grill. At least that is how we did it in CT. Is that how it is still done?

Debo, I was about to say there goes my diet…. but I think my low carb meal plan can handle it.

I was just checking out some super duper deals through southwest and there is nothing spectacular yet for Texas from Seattle….. but will make sure to really consider it when I see a deal float by!

Sharon-I think our diets are safe with Texas BBQ as we do not slather the meat up with a laod of sweet sauce. Our BBQ is more of a smokey experience.
